Traditionally it’s just served with salt and pepper, but with some herb oil and chili oil it really bumps up the flavor. Vivoli Gelato - Continuing with this Italian food tour with had a Gran Crema Caffè Vivoli (Affogato) - Cream gelato with coffee, at one of the original and historical gelato shops - it was delicious! Tripe sandwich: Da' Vinattieri - Edoardo next brought us into an alley to eat Trippa alla Fiorentina - Florence style tripe sandwich, which is slightly different from the lampredetto we had already eaten earlier. La Sorbettiera - After trying the original and old style gelato affogato, we then needed to try a modern gelato spot. Cibrèo Ristorante, Florence, Italy (https://maps.app.goo.gl/riMyoyB2x3RbrS5EA) - Finally, along with all the street food, we decided to sit down for a massive higher end dinner to highlight some of the true and nearly forgotten Italian dishes of Florence. We tried the massive Antipasto, Collo di pollo ripieno - stuffed chicken neck, Tagliolini cacio e burro - pasta with cheese and butter, Roastbeef del Cibrèo Caffè - roast beef with butter sauce, and finally Cibrèo - chicken and rooster organs in egg and lemon sauce!
